Delicious Veggie Quesadillas with Grilled Vegetables

Ingredients

  • 8 flour tortillas
  • 2 cups of various grilled veggies like bell peppers, mushrooms, onions, zucchini. Left overs work the best.
  • 1 1/2 cup shredded vegan cheese

Preparation

  1. Warm up the flour tortillas and fill them with vegan cheese, layer it with grilled veggies, add more vegan cheese.

  2. Cover with another tortilla and cook the quesadillas over a medium heat on a non stick pan.

  3. Repeat the process with other tortillas.

  4. Enjoy with fresh guacamole and salsa
