Incredible Vegan Mushroom Stroganoff

Ingredients

  • 1 onion diced
  • 2-3 garlic cloves minced
  • 1 tbsp vegetable oil
  • 11 oz fresh mushrooms sliced
  • 4 tbsp white wine (optional)
  • 1 tbsp tamari or soy sauce
  • 3/4 cup vegetable broth or water
  • 3/4 cup plant-based milk or cream
  • 2 tbsp cornstarch
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • A pinch of red pepper flakes
  • Salt & black pepper to taste
  • 1 tbsp nutritional yeast flakes (optional)
  • Fresh thyme leaves and/or parsley (and/or tarragon) chopped

Preparation

  1. Heat vegetable oil in a pan over medium heat

  2. Sauté diced onion and minced garlic until softened

  3. Add sliced mushrooms and cook until they release moisture and brown

  4. Optionally, add white wine and cook until evaporated

  5. Stir in tamari or soy sauce, vegetable broth, plant-based milk, cornstarch, onion powder, garlic powder, smoked paprika, red pepper flakes, salt, and black pepper

  6. Bring mixture to a simmer and cook until thickened, stirring occasionally

  7. Optionally, add nutritional yeast flakes and stir to combine

  8. Mix in chopped fresh thyme, parsley, and/or tarragon

  9. Serve over brown rice or pasta of choice
