Sweet Potato Toast with Fried Egg and Greens

Ingredients

  • 1 large sweet potato
  • Avocado
  • Vanilla almond butter
  • Spinach
  • Egg

Preparation

  1. Optionally microwave the sweet potato for 1-2 minutes to soften, then slice it thinly.

  2. Broil the sweet potato slices at 500°F for 12 minutes on the bottom oven shelf.

  3. Sauté the spinach until wilted.

  4. Fry the egg to your desired doneness.

  5. Top the broiled sweet potato slices with avocado, vanilla almond butter, sautéed spinach, and the fried egg.
