Sweet Potato Toasts with Avocado and Egg Toppings

Ingredients

  • 1 large sweet potato
  • 1/2 avocado
  • Everything but the bagel seasoning
  • Peanut butter
  • Strawberries
  • 1 egg
  • Ghee

Preparation

  1. Slice the sweet potato into circles.

  2. Broil at 500F for 10-12 minutes on the bottom shelf. Use a round sweet potato for best fit.

  3. Mash 1/2 avocado and mix with everything but the bagel seasoning.

  4. Fry 1 egg in ghee.

  5. Top the sweet potato toasts with the avocado mixture, peanut butter with strawberries, and the fried egg.
