Vegan Seven Layer Dip
Ingredients
- 1 can refried beans
- 1 cup guacamole
- vegan sour cream
- 1 cup salsa
- vegan cheese
- romaine lettuce
- chopped cherry tomatoes
- optional: olives
- optional: green onion
For vegan sour cream
- 1/2 block tofu
- 2 tbsp lemon juice
- 1 tbsp nutritional yeast
- 1 tsp apple cider vinegar
- 1 tsp garlic powder
- 1 tsp onion powder
Preparation
Prepare the vegan sour cream by blending 1/2 block of tofu with 2 tablespoons lemon juice, 1 tablespoon nutritional yeast, 1 teaspoon apple cider vinegar, 1 teaspoon garlic powder, and 1 teaspoon onion powder until smooth.
In a serving dish, spread the refried beans evenly as the first layer.
Add a layer of guacamole over the beans.
Spread the prepared vegan sour cream on top of the guacamole.
Add a layer of salsa over the sour cream.
Sprinkle vegan cheese over the salsa.
Add chopped romaine lettuce as the next layer.
Top with chopped cherry tomatoes.
If using, add olives and chopped green onions.
Refrigerate for at least 30 minutes to allow the flavors to meld, then serve with tortilla chips.
