Veggie Quesadillas with Grilled Vegetables and Vegan Cheese

Ingredients

  • 8 flour tortillas
  • 2 cups of various grilled veggies like bell peppers, mushrooms, onions, zucchini
  • 1 1/2 cup shredded vegan cheese

Preparation

  1. Use leftover grilled vegetables for best results.

  2. Warm up the flour tortillas.

  3. Fill them with vegan cheese.

  4. Layer with grilled veggies.

  5. Add more vegan cheese.

  6. Cover with another tortilla.

  7. Cook over medium heat on a non-stick pan.

  8. Repeat the process with other tortillas.

  9. Enjoy with fresh guacamole and salsa.
