Cashew Queso and Salsa Dip

Ingredients

  • 1 cup of soaked cashews
  • 1/2 cup and 2 tbs of filtered water
  • 1/4 cup of nutritional yeast
  • 1/4 cup of salsa
  • 1 tbs of vegan spread
  • 1 1/4 tsp of pink himalayan salt
  • 1 tsp of paprika
  • 3/4 tsp of garlic powder
  • For the salsa
  • 1 cup of chopped vine ripe tomatoes 1/4 cup of minced red onion
  • 1 jalapeño pepper minced
  • 1 tbs of sliced green onion
  • Fresh squeezed juice from half a lime

Preparation

  1. Preheat oven to 350°, place tortilla chips onto parchment paper and bake for 5 minutes each side

  2. Combine all ingredients for queso in a blender or food processor

  3. Blend until smooth and pour into a serving dish

  4. Combine all ingredients for salsa and place into a serving dish

  5. Remove tortilla chips from oven and garnish with fresh squeezed lime juice and enjoy???? #threebunnies
