Choc Pot Birthday Cake

Ingredients

  • 400ml soya milk
  • 1/2 tbsp cider vinegar
  • 1 1/2 tbsp vanilla extract
  • 2 tbsp ground flax seed
  • 350g wholemeal self-raising flour
  • 1/2 tsp salt
  • 50g cocoa powder
  • 1 tsp bicarbonate of soda
  • 150g Fruit Syrup
  • 100ml rapeseed oil
  • 1 pot Choc Pot and fruit of your choice to decorate

Preparation

  1. First mix the milk and vinegar together in a bowl. Then add the vanilla and flax seeds and mix well

  2. In another bowl combine the flour, cocoa powder, salt and bicarbonate of soda. Mix the Fruit Syrup and oil into the milk mixture and then pour on top of the flour and mix until no lumps remain

  3. Divide between two 20cm round, lined cake tins and bake at 180C for about 25mins or until a skewer inserted in the middle comes out clean. Remove from tins and cool on a wire rack

  4. Spread one of the cakes with Choc Pot, decorate with fruit and then place the second cake on top and repeat with more Choc Pot and fruit
