Fluffy Vegan Cupcakes with Almond Frosting
Ingredients
Cupcake
- 1 1/2 cup almond milk
- 1 tablespoon apple cider vinegar
- 1/2 cup coconut oil
- 2 teaspoons vanilla extract
- 2 cups flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Frosting
- 1/4 cup coconut oil
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 2 tablespoons almond milk
Preparation
Mix 1 1/2 cups of almond milk and 1 tablespoon of apple cider vinegar. Let it sit for about 5-10 minutes.
Mix the rest of the wet ingredients with the almond milk and apple cider vinegar mixture.
Mix all dry ingredients together.
Combine wet and dry ingredients and mix well.
Line a muffin pan with baking cups and pour the mixture into them.
Bake at 350 degrees for about 20 minutes. Check if they are done by looking for a fluffy and round top or using a toothpick.
Use a hand mixer to blend the frosting ingredients: 1/4 cup coconut oil, 2 cups powdered sugar, 1 teaspoon vanilla extract, and 2 tablespoons almond milk.
Frost the cupcakes and add sprinkles.
