Fluffy Vegan Cupcakes with Almond Frosting

Ingredients

Cupcake

  • 1 1/2 cup almond milk
  • 1 tablespoon apple cider vinegar
  • 1/2 cup coconut oil
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Frosting

  • 1/4 cup coconut oil
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 tablespoons almond milk

Preparation

  1. Mix 1 1/2 cups of almond milk and 1 tablespoon of apple cider vinegar. Let it sit for about 5-10 minutes.

  2. Mix the rest of the wet ingredients with the almond milk and apple cider vinegar mixture.

  3. Mix all dry ingredients together.

  4. Combine wet and dry ingredients and mix well.

  5. Line a muffin pan with baking cups and pour the mixture into them.

  6. Bake at 350 degrees for about 20 minutes. Check if they are done by looking for a fluffy and round top or using a toothpick.

  7. Use a hand mixer to blend the frosting ingredients: 1/4 cup coconut oil, 2 cups powdered sugar, 1 teaspoon vanilla extract, and 2 tablespoons almond milk.

  8. Frost the cupcakes and add sprinkles.
