Healthy-Ish Vegan Birthday Rice Crispy Treats

Ingredients

  • 1/2 cup solid refined coconut oil
  • 20 ounces @mydandies
  • 1 tsp vanilla and a pinch of salt
  • 8 cups organic brown rice crisps

Preparation

  1. All you gotta do is: line a 9x13 baking dish with nonstick parchment paper (I use binder clips to hold down sides)

  2. Heat a LARGE pot to medium heat and add 1/2 cup solid refined coconut oil

  3. When oil starts to melt, add 20 ounces @mydandies (I use large ones) and use a wooden spoon to stir while they melt

  4. Once they’ve melted into a large gooey mess, remove pot from the heat and QUICKLY stir in 1 tsp vanilla and a pinch of salt

  5. Then immediately add 8 cups organic brown rice crisps (I used @barbarasbakery brand) and stir until combined

  6. Spread into lined dish and pat into an even layer, then top with sprinkles if using

  7. Allow to cool at least 4 hours before slicing and serving
