Low Fodmap Goji Berry & Walnut Bliss Balls
Ingredients
- 1 cup activated walnuts ⠀⠀⠀
- 1/4 cup sundried goji or cranberries ⠀⠀⠀
- 1/4 cup activated sunflower seeds⠀⠀⠀
- 1 tbsp chia seeds⠀⠀⠀
- 2 tbsp raw cacao powder ⠀⠀⠀
- 3 tbsp of your favourite nut butter (i find homemade peanut butter works best)⠀⠀⠀
- water as needed⠀⠀⠀
- 1 cup of organic desiccated coconut for rolling⠀⠀⠀
- pinch of himalayan sea salt⠀⠀⠀
Preparation
Place the nuts & seeds into a food processor and pulse until the nuts are roughly chopped (but not until they begin to form a powder so pulse gradually)⠀⠀⠀
In a large bowl combine the nuts, goji berries, chia seeds, salt, cacao and mix well.⠀⠀⠀
Spoon in the nut butter spread and mix well (it helps to leave the nut butter out of the fridge if that’s where it’s kept so it’s easier to work with). If you find the mixture is a little dry then add a tablespoon of water⠀⠀⠀
Roll the mixture into small balls using your hands and roll the balls in a bowl of desiccated coconut, ensuring they are entirely covered. Place the balls in an airtight container in the fridge until you’re ready to devour them!⠀
