Low FODMAP Goji Berry Walnut Bliss Balls
Ingredients
- 1 cup activated walnuts
- 1/4 cup sundried goji or cranberries
- 1/4 cup activated sunflower seeds
- 1 tbsp chia seeds
- 2 tbsp raw cacao powder
- 3 tbsp of your favourite nut butter
- water as needed
- 1 cup of organic desiccated coconut for rolling
- pinch of Himalayan sea salt
Preparation
Place the nuts and seeds into a food processor and pulse until roughly chopped, but not to a powder.
In a large bowl, combine the nuts, goji berries, chia seeds, salt, and cacao, and mix well.
Spoon in the nut butter and mix well, and if the mixture is dry, add a tablespoon of water.
Roll the mixture into small balls using your hands and roll them in desiccated coconut to cover entirely, then place the balls in an airtight container in the fridge until ready to eat.
