Easy-to-Make Vegan Marbled Donuts at Home

Ingredients

  • 1 cup plant milk
  • 1 tbsp lemon juice
  • 2 cups oat flour (blend regular oats)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup coconut/brown sugar
  • 1/4 tsp ground stevia leaves (can sub for another sweetener)
  • 3/4 cup applesauce (blend peeled and boiled apples)
  • 2 tbsp peanut butter
  • 2 tbsp maple syrup
  • 1 tbsp cacao powder

Preparation

  1. Preheat oven to 180°C.

  2. In a small bowl mix plant milk and lemon juice. Let it sit for 5 minutes.

  3. In another bowl combine oat flour, baking powder, baking soda, sugar, and stevia.

  4. Add the milk mixture, applesauce, peanut butter, and maple syrup to the dry ingredients and thoroughly fold them in using a spatula. Make sure not to over mix the ingredients. Allow this to sit for about 5 minutes.

  5. Split the batter into two parts. Add 1 tbsp cacao powder to one of them and gently mix.

  6. Grease a donut pan or use a non-stick one. Fill 3/4 of the capacity of each cavity using half and half of the batters. You can get creative with how you want to play with the batters (i.e. swirls, layers, etc.).

  7. Bake for 20 minutes (I made 2 batches of 6 donuts each).

  8. Let the donuts cool on a wire rack to room temperature and spread whatever you like the most on top if desired. I garnished some with peanut butter, chocolate ganache, and cashew cream.
