Christmas Cranberry Bread
Ingredients
- 1/3 cup avocado oil
- 1/2 cup raw brown or coconut sugar
- 1 egg or vegan egg replacement
- 1 teaspoon vanilla bean paste
- 1 teaspoon orange extract
- 3/4 cup coconut milk
- 2 tablespoons apple cider vinegar
- 2 cups all-purpose flour, sifted
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- Pinch of salt
- 1 cup frozen cranberries (do not thaw)
Preparation
Preheat the oven to 180°C and grease and flour a loaf baking tin.
In a mixing bowl, whisk together the avocado oil and sugar.
Whisk in the egg or vegan egg replacement, vanilla bean paste, and orange extract.
Add the coconut milk and apple cider vinegar to the mixture and whisk well.
Mix in the sifted all-purpose flour, baking soda, baking powder, and salt until just combined.
Fold in the frozen cranberries.
Transfer the batter into the prepared loaf baking tin.
Bake for 50 to 60 minutes or until the bread turns golden brown and a toothpick inserted into the center comes out clean.
Allow the bread to cool in the baking tin for 5 minutes before removing. Then, cool it completely on a rack.
Slice the bread and enjoy!
