Christmas Cranberry Bread Made with Avocado Oil
Ingredients
- 1/3 cup avocado oil
- 1/2 cup raw brown or coconut sugar
- 1 egg or vegan egg replacement
- 1 teaspoon vanilla bean paste
- 1 teaspoon orange extract
- 3/4 cup coconut milk
- 2 tablespoons apple cider vinegar
- 2 cups all-purpose flour, sifted
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- pinch of salt
- 1 cup frozen cranberries (do not thaw)
Preparation
Preheat oven to 180°C, grease and flour a baking tin loaf.
In a mixing bowl whisk avocado oil and sugar together, whisk in egg or egg replacement, vanilla and orange extract.
Whisk in coconut oil and apple cider vinegar.
Add in flour, baking soda, baking powder and salt, mix until just combined.
Fold in frozen cranberries.
Transfer the batter into the prepared tin loaf.
Bake for 50 to 60 minutes until golden brown and a toothpick inserted into the centre comes out clean.
Allow 5 minutes to cool in the tin loaf before removing.
Cool completely on a rack.
Slice and enjoy!
