Vegan Gingerbread Biscuits with Oat Milk

Ingredients

  • 135g Grapeseed oil
  • 150g dark brown sugar
  • 150g golden caster sugar
  • 125g golden syrup
  • 125ml oat milk
  • 650g wholemeal flour
  • 2tsp ginger
  • 1 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 1 tsp salt

Preparation

  1. Mix the first five ingredients together in a mixer or with a whisk if doing by hand.

  2. Add the flour and the rest of the ingredients and mix to a fairly stiff dough.

  3. Roll out on a floured work surface and place on a baking sheet with enough room around them to spread a little.

  4. Bake at 175°C for about 10 mins.

  5. Let cool on trays for a couple of minutes before transferring to wire racks to cool completely.

Tips

  1. Best consumed in moderation due to high sugar content.
