Salted Chocolate Pecan Pie
Ingredients
- 2 cups almond flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 egg
- 2 tbsp coconut sugar
- 1/4 cup melted coconut oil
- 2/3 cup coconut sugar
- 1/2 cup coconut oil
- 1/2 cup maple syrup
- 1 tsp vanilla
- 2 eggs
- 2 cups pecans (chopped)
- 1 cup pecan halves
- 1 cup chocolate chips
- 1/4 cup chocolate chips
Preparation
Heat the oven to 350F and prepare a 9-inch pie dish by greasing it.
In a large bowl, mix together almond flour, baking soda, cinnamon, and salt to make the crust.
In a small bowl, whisk together the egg, coconut sugar, and melted coconut oil. Add this mixture to the dry ingredients and mix until well combined, forming a ball shape.
Press the crust mixture into the greased pie dish and bake for 8 minutes. Allow it to cool.
For the filling, heat coconut sugar, coconut oil, and maple syrup in a saucepan. Bring it to a boil and then simmer over medium heat for 4-5 minutes, stirring occasionally. Turn off the heat and let it cool.
Once the mixture is at room temperature, stir in vanilla and salt. Whisk in two eggs.
Chop the pecans and add them, along with 3/4 cup chocolate chips, into the sugar mixture. Mix well.
Pour the filling mixture into the baked crust. Top with pecan halves and 1/4 cup chocolate chips.
Bake the pie for 40 minutes.
Allow the pie to cool before serving. Store it on the counter or in the fridge.
