Ukrainian Christmas Eve Homemade Perogies Recipe 🥟Ua🎄

Ingredients

  • 3/4 cup warm water
  • 1 egg
  • 2 tbsp olive oil
  • 2.5-3 cups flour
  • 1 tsp salt
  • 1 pound potatoes
  • 2 tbsp butter (or @earthbalance)
  • 1.5 cups shredded cheese (cheddar & emmental)
  • 1 tbsp black pepper
  • Flour for dusting
  • Sautéed onions (optional)
  • Butter for rubbing

Preparation

  1. Combine warm water, egg, and olive oil in a large bowl.

  2. Slowly add 2.5-3 cups of flour and 1 tsp salt to the mixture to form a dough. You can use a stand mixer if desired.

  3. Knead the dough on a floured surface until smooth. Divide it into 2 portions and cover with plastic wrap. Let it sit for 20 minutes.

  4. While the dough rests, boil the potatoes until tender (about 25 minutes).

  5. Drain and mash the boiled potatoes.

  6. Stir in 2 tbsp of butter, 1.5 cups of shredded cheese, and 1 tbsp of black pepper to the mashed potatoes.

  7. Roll out the dough until it's about 1/8 inch thick. Cut out circles using a cookie cutter or the bottom of a glass.

  8. Stretch out each circle of dough and place a ball of potato filling in the center. Close the dough around the filling, pinching the edges to seal them well.

  9. Place the assembled perogies on a floured dish and cover them with a towel while you continue folding.

  10. Bring a large pot of water to a boil. Drop about 8 perogies into the boiling water at a time and cook until they float to the top.

  11. Use a slotted spoon to remove the cooked perogies from the water. Let them cool on a cutting board, then rub them with butter and place them in a greased dish.

  12. Optionally, serve the perogies immediately with sautéed onions or pan fry them until crispy.
