Vegan & Gluten-Free Corn Bread

Ingredients

  • 1 can of corn (organic preferred)
  • 1 cup water
  • 1 Tbsp apple cider vinegar
  • 3 Tbsp almond butter
  • 3 Tbsp apple sauce
  • 1 cup cornmeal
  • 1 cup oat flour (blended oats)
  • 2 Tbsp coconut sugar
  • 4 tsp baking powder
  • 1/2 tsp salt

Preparation

  1. Blend the corn with water, vinegar, almond butter, and apple sauce until smooth.

  2. In another bowl, mix the cornmeal, oat flour, coconut sugar, baking powder, and salt.

  3. Combine the wet and dry ingredients.

  4. Pour the batter into a baking dish lined with parchment paper.

  5. Bake at 350°F (175°C) for about 20-25 minutes, until golden.

  6. Let the cornbread cool completely before slicing.

  7. Warm slightly before serving.

  8. Store in the refrigerator for up to 5 days.
