Homemade Potli Samosas

Ingredients

For Stuffing

  • Potatoes - 2 medium, boiled and mashed
  • Peas - 1/4 cup, thawed and mashed
  • Salt - to taste
  • Black pepper - 1/4 tsp
  • Turmeric powder - 1/4 tsp
  • Mango powder - 1 tsp
  • Cumin seeds - 1 tsp
  • Red chilli powder (Kashmiri)
  • Coriander leaves - 2 tbsp

For Dough

  • Spelt flour - 1 cup
  • Salt - 1/4 tsp
  • Oil or Ghee - 2 tbsp
  • Oil - for frying (you can bake these too)

Preparation

  1. Add salt to the flour, then add oil and mix well to make a soft dough. Set it aside while you prepare the stuffing.

  2. In a nonstick pan, heat oil and add cumin seeds. Allow them to splutter, then add spices and mix well.

  3. Add the boiled and mashed potatoes to the pan, along with the peas. Mix thoroughly and add mango powder and coriander leaves. Cook for a few seconds, then let the mixture cool for 5 to 10 minutes. Shape the mixture into small balls.

  4. Take small balls of the dough and roll them into thin disk shapes using a rolling pin. Keep the dough covered with a cloth to prevent drying.

  5. Place a portion of the stuffing mixture in the center of each dough disk. Moisten the edges with water to help with sealing.

  6. Shape the dough into potli (gift packet) shapes, carefully sealing the sides.

  7. Fry the potli samosas on medium heat until they turn golden brown.

  8. Serve the potli samosas with your choice of chutney and enjoy!
