Hidden Bunny Loaf for Easter Joy
Ingredients
Vanilla Loaf
- Spelt flour - 2 cups
- Baking powder - 2 tsp
- Baking soda - 1 tsp
- Pinch of salt
- Olive oil - 1/2 cup
- Vanilla extract - 1 tsp
- Cinnamon powder - 1 tsp
- Raw sugar - 1 cup
Chocolate Loaf
- Spelt flour - 1 cup
- Baking powder - 1 tsp
- Baking soda - 1 tsp
- Pinch of salt
- Olive oil - 1/4 cup
- Soy milk - 1/2 cup
- Cacao powder - 2 tbsp
- Raw sugar - 1/2 cup
Preparation
Preheat the oven to 180°C and line a loaf tin with baking paper for the chocolate cake.
In a bowl, mix all the dry ingredients for each loaf separately.
For each loaf, add olive oil and any liquid ingredients (soy milk for chocolate loaf, vanilla extract for vanilla loaf) and mix gently. Avoid overmixing the batter.
Transfer the mixture for each loaf into separate loaf pans and bake for 40 to 45 minutes.
Allow the loaves to cool on a wire rack. Once cooled, slice the vanilla loaf in half and cut bunny shapes, around 5 to 6.
Grease and line the tin again, and make the batter for the vanilla loaf in the same way.
Spread a third of the vanilla batter onto the base of the loaf tin, then arrange the chocolate bunny shapes along the base.
Carefully spread the remaining vanilla batter over the bunny shapes, ensuring it covers them evenly.
Bake the combined loaf for 40 to 45 minutes, or until a skewer comes out clean.
Once the loaf has cooled, spread chocolate ganache on top and garnish with Easter toppings.
