Hot Cross Buns Recipe for a Happy Easter
Ingredients
- 1 tablespoon dried yeast
- 1 teaspoon brown sugar
- 3/4 cup warm soy milk
- 1/2 cup cold soy milk
- 50g dairy-free butter, melted
- 1 egg, lightly whisked
- 3 1/2 cups plain flour
- 1 cup raisins
- 1/3 cup brown sugar
- 1 tablespoon mixed spice
- Pinch of salt
For the Cross
- 1/2 cup plain flour
- 1/2 cup water
For the Glaze
- 1/3 cup caster sugar
- 1 teaspoon cinnamon
- 1/2 cup hot water
Preparation
Whisk yeast, sugar, and 3/4 cup of warm milk in a jug. Set aside for 10 minutes or until frothy.
Whisk in 1/2 cup of cold milk, melted butter, and egg.
In a bowl, combine flour, raisins, brown sugar, mixed spice, and salt. Make a well in the center and add the yeast mixture. Stir until combined.
Use your hands to bring the dough together on a floured surface. Knead for 10-15 minutes until smooth and elastic.
Place the dough in a greased bowl, cover with a towel, and let it rise for 1 1/2 hours until doubled in size.
Punch down the center of the dough, then knead for 2 minutes on a floured surface.
Shape the dough into 12 even portions and place them in a prepared pan. Cover and let them rise for 30 minutes.
Preheat the oven to 200°C. Make a paste using flour and water, and pipe crosses onto the buns.
Bake for 10 minutes, then reduce the oven temperature to 160°C and bake for an additional 20 minutes or until golden and cooked through.
Meanwhile, combine caster sugar, cinnamon, and hot water for the glaze. Brush the glaze over the buns after removing them from the oven.
