Quick and Easy Easter Mugcake

Ingredients

  • 5 tbsp self raising flour
  • 2 tbsp hot soya milk
  • 1 tbsp low fat margarine
  • 1 tbsp sugar
  • Squeeze of lemon juice
  • 1/3 tsp baking powder
  • 3 Mini eggs (for decoration)
  • 1 tbsp powdered sugar + water (for decoration)

Preparation

  1. Heat the soya milk in the microwave for 20 seconds.

  2. In a different small mug, mix the low-fat margarine, sugar, lemon juice, and baking powder until foamy. Add the self-raising flour and hot soya milk, then mix until the batter has a creamy consistency.

  3. Microwave the mugcake for 60 seconds.

  4. Combine powdered sugar with a small amount of water to create an icing, then drizzle it over the top of the mugcake. Decorate with Mini Eggs.

  5. Enjoy your Easter mugcake immediately.
