Quick and Easy Easter Mugcake
Ingredients
- 5 tbsp self raising flour
- 2 tbsp hot soya milk
- 1 tbsp low fat margarine
- 1 tbsp sugar
- Squeeze of lemon juice
- 1/3 tsp baking powder
- 3 Mini eggs (for decoration)
- 1 tbsp powdered sugar + water (for decoration)
Preparation
Heat the soya milk in the microwave for 20 seconds.
In a different small mug, mix the low-fat margarine, sugar, lemon juice, and baking powder until foamy. Add the self-raising flour and hot soya milk, then mix until the batter has a creamy consistency.
Microwave the mugcake for 60 seconds.
Combine powdered sugar with a small amount of water to create an icing, then drizzle it over the top of the mugcake. Decorate with Mini Eggs.
Enjoy your Easter mugcake immediately.
