Spiced Lamb Shanks with Mashed Potatoes
Ingredients
- 4 lamb shanks
- 1.5 teaspoons salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cardamom
- 3 tablespoons olive oil
- 1 large chopped onion
- 2 cloves minced garlic
- 2 chopped hot peppers
- 2 cups water
- 3 large peeled and chopped tomatoes
- 1/2 cup sliced black olives
Potato mixture
- 4 large potatoes
- 1/4 cup butter
- 1 cup milk
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Preparation
In a small bowl, place the salt, pepper, paprika, cumin, coriander, and cardamom, and mix well.
Spread half of the spice mixture over the lamb shanks and rub well to coat completely.
In a large skillet, heat the olive oil, add the lamb shanks to the hot oil, and using a wooden spoon, stir until the color changes.
Add the remaining spices to the lamb shanks in the skillet.
Add the onion, garlic, hot pepper, and tomato, and stir for a few seconds.
Add the water, cover the skillet, and cook on medium heat for an hour until the lamb shanks are fully cooked and a light sauce forms.
Add the olives and let it boil for 5 minutes.
For the potato mixture: peel the potatoes and cut them into cubes.
In a large pot, heat plenty of water, add the potatoes, and cook on medium heat until fully cooked.
In a large bowl, using a potato masher, mash the hot potatoes to get a very smooth puree.
Add the butter, salt, pepper, and milk, and using a wide plastic spoon, stir until the milk is absorbed.
For serving, place the potato puree in a serving dish and spread it as a layer, place the lamb shanks on top, pour the sauce over, sprinkle with parsley and tomato cubes, and serve hot.
