Dad's Nostalgic Bread & Butter Pudding
Ingredients
- 8 slices of bread (or 8 small chocolate chip brioche for a variation)
- Butter (enough to spread all the bread)
- 3 eggs
- 300ml double cream
- 100ml milk
- 1 tsp cinnamon
- Handful of sultanas or more chocolate chips
- 4 tablespoons caster sugar
Preparation
Spread the slices of bread with butter on both sides and layer them in an ovenproof dish.
Sprinkle the sultanas (or chocolate chips) over the bread layer.
Crack the eggs into a bowl, add the double cream, milk, 2 tablespoons of sugar, and cinnamon. Whisk to combine, and you can also add 1/2 tsp of vanilla extract.
Pour the egg and cream mixture over the bread slices.
Sprinkle the remaining sugar on top and add chocolate chips if desired.
Bake in the oven at 180°C (fan) for about 35 minutes or until the top is golden.
Serve warm, optionally with a dollop of cinnamon ice cream.
