Football Cookie Cupcakes
Ingredients
- 3/4 cup all-purpose flour (gluten-free baking flour can be used)
- 1/2 cup coconut sugar
- 1/2 tsp baking powder
- 1/4 cup peanut butter
- 1/2 cup almond milk
- 2 eggs
- Cookies of your choice (mint chocolate cookies used)
Preparation
Preheat the oven to 350°F (175°C) and line a muffin tin.
In a large bowl, whisk together the eggs, peanut butter, and almond milk. Stir in the dry ingredients and add 10 crumbled cookies.
Scoop the batter into the muffin tin, making 10-11 cupcakes, and bake for 15 minutes.
