Football Cookie Cupcakes

Ingredients

  • 3/4 cup all-purpose flour (gluten-free baking flour can be used)
  • 1/2 cup coconut sugar
  • 1/2 tsp baking powder
  • 1/4 cup peanut butter
  • 1/2 cup almond milk
  • 2 eggs
  • Cookies of your choice (mint chocolate cookies used)

Preparation

  1. Preheat the oven to 350°F (175°C) and line a muffin tin.

  2. In a large bowl, whisk together the eggs, peanut butter, and almond milk. Stir in the dry ingredients and add 10 crumbled cookies.

  3. Scoop the batter into the muffin tin, making 10-11 cupcakes, and bake for 15 minutes.
