Garlicky Sun-Dried Tomato Walnut Dip

Ingredients

  • 1/2 cup unroasted walnut butter from Artisana Naturals
  • 1/2 cup sun-dried tomatoes
  • 1/2 cup pitted green olives
  • 1/4 cup nutritional yeast
  • Juice of 1 lemon
  • 1 tsp dried parsley
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp balsamic vinegar
  • 1 1/2 tsp garlic powder
  • 1-2 tbsp water (if needed)
  • Crackers (for serving)
  • Mini peppers (for serving)

Preparation

  1. Add all the dip ingredients (except water) to a food processor.

  2. Blitz the ingredients until they are well combined. If you prefer a chunky texture, pulse 12-14 times until the ingredients are finely minced. For a smooth and creamy dip, mix on high until achieved.

  3. If necessary, add 1 tbsp of water at a time to achieve the desired consistency. Stop to scrape down the sides of the food processor as needed.

  4. Serve the dip at room temperature immediately, or chill and serve within 5 days. Enjoy with mini peppers and crackers.
