Macadamia and Mango Cookies
Ingredients
- triple m cookies:
- 130ml plant milk
- 95ml oil- i used rapeseed
- 200g sugar
- 2 tbsp ground flax seed
- 300g flour
- 3 tbsp maca powder
- 1 tsp ginger
- 1/2 tsp salt
- 1/2 tsp bicarbonate of soda
- 1/4 tsp baking powder
- 70g macadamia nuts @nutspick
- 50g dried mango
Preparation
Mix the milk, oil, sugar and flax seed together well
Add the rest of the ingredients except the macadamias and mango and mix until well combined. Finally chop the macadamias in half and cut up the mango and mix it into the dough
Scoop out a heaped tablespoon of the mixture and roll into a ball. Place apart on a greased baking sheet and flatten with damp hands so the dough doesn’t stick. It also helps to get a nice smooth cookie. Bake at 180C for about 8-10 minutes. The cookies should be turning golden and the tops beginning to crack. Cool on a wire rack
