Triple Chocolate Cake Donuts
Ingredients
- 2/3 cups cocoa powder
- 1 3/4 cups whole wheat pastry flour (or all purpose flour)
- 1 1/4 cup dark brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/3 cup mini chocolate chips
- 1/4 cup flax meal mixed with 1/2 cup water (or 2 eggs)
- 3/4 cup non dairy milk
- 1 tablespoon vanilla extract
- 2 teaspoons white vineger
- 1/2 cup coconut oil, melted and slightly cooled (or butter/margarine)
Preparation
Preheat the oven to 350°. 2. In a mixing bowl, combine the cocoa powder, baking powder, baking soda, salt, cinnamon, flour and sugar
In a separate bowl, mix the flax meal, milk, vanilla and vinegar
Fold the dry ingredients into the wet ingredients. Once a batter has formed, add in the melted oil and chocolate chips. Make sure NOT TO OVER MIX, just fold until almost all of the flour is absorbed
Fill a ziplock bag with batter and cut off the tip. Pipe the batter into a sprayed doughnut tray with just enough to almost fill the molds. Do not over fill, this recipe expands during baking
Bake for 8-10 minutes (12-14 minutes for the large doughnut tray). Allow to cool for 10 minutes. Dip in melted chocolate and sprinkle crumbs over the top. **FUN TIP: There's always one less pretty doughnut in every batch, shes uses that as a topping (and a taster?)
