Ultimate Instant Pot Pulled Pork

Ingredients

  • 2-3 lb pork loin (preferably loin over shoulder), cut into cubes
  • 1 tbsp coconut sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 1/2 tsp cayenne
  • 1.5 cups BBQ sauce (sweet heat preferred)
  • 1 cup broth
  • 1/4 cup apple cider vinegar

Preparation

  1. Combine coconut sugar, garlic powder, onion powder, smoked paprika, cumin, salt, pepper, and cayenne in a bowl. Toss the cubed pork with the spice mixture.

  2. Set the Instant Pot to sauté mode. Add oil and sear the pork on all sides until browned. You might need to do this in batches.

  3. Cancel the sauté mode and add a splash of broth to deglaze the bottom of the Instant Pot. Make sure nothing is sticking.

  4. In a separate bowl, whisk together 1 cup of BBQ sauce, apple cider vinegar, and broth.

  5. Return the seared pork to the Instant Pot. Pour the sauce mixture over the pork.

  6. Close the Instant Pot lid and set it to pressure cook for 45 minutes. Once cooked, let the pressure release naturally for 10 minutes.

  7. Remove the pork and shred it using two forks. Return the shredded pork to the Instant Pot.

  8. Turn on sauté mode again to thicken the sauce a bit. Add extra BBQ sauce as needed for desired consistency.

  9. Serve the pulled pork on buns, salads, or with rice. Enjoy!
