Chocolate Chunk Pumpkin Protein Muffins
Ingredients
- 1 cup pureed pumpkin
- 1/3 cup coconut oil
- 1 cup coconut sugar
- 3/8 cup rice milk
- 1 tsp vanilla extract
- 1 1/4 cup all purpose flour
- 1/4 cup pumpkin seed protein powder (we used @purya.superfoods)
- 1 tsp ground cinnamon
- 1 tsp nutmeg
- 1/2 ground ginger
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup chocolate chunks
Preparation
Combine first five ingredients into a large bowl and next combine remaining ingredients in a separate large bowl
Gradually combine dry ingredients into wet ingredients and stir until all ingredients are well combined
Preheat oven to 350F and in cupcake forms of choice fill 3/4 full and top with raw pumpkin seeds
Bake for 22-24 minutes and once time is up remove from oven and allow to cool for 5 minutes
Drizzle muffins with chocolate and garnish with extra pumpkin seeds and enjoy
