Chocolate Chunk Pumpkin Protein Muffins

Ingredients

  • 1 cup pureed pumpkin
  • 1/3 cup coconut oil
  • 1 cup coconut sugar
  • 3/8 cup rice milk
  • 1 tsp vanilla extract
  • 1 1/4 cup all purpose flour
  • 1/4 cup pumpkin seed protein powder (we used @purya.superfoods)
  • 1 tsp ground cinnamon
  • 1 tsp nutmeg
  • 1/2 ground ginger
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup chocolate chunks

Preparation

  1. Combine first five ingredients into a large bowl and next combine remaining ingredients in a separate large bowl

  2. Gradually combine dry ingredients into wet ingredients and stir until all ingredients are well combined

  3. Preheat oven to 350F and in cupcake forms of choice fill 3/4 full and top with raw pumpkin seeds

  4. Bake for 22-24 minutes and once time is up remove from oven and allow to cool for 5 minutes

  5. Drizzle muffins with chocolate and garnish with extra pumpkin seeds and enjoy
