Easy Gluten-Free Vegan Pumpkin Nutter Butters
Ingredients
- 1/4 cup nut butter (such as pumpkin spice pecan butter)
- 1/2 cup pumpkin purée
- 1 cup oat flour (you can blend oats into flour)
- 1/2 tsp. baking powder
- 1/4 cup granulated sugar (e.g., coconut sugar)
Preparation
Preheat the oven to 350°F (175°C).
In a bowl, whisk together the nut butter and pumpkin purée until well combined.
Stir in the oat flour, granulated sugar, and baking powder until a dough forms.
Use a mini cookie scoop to portion out 11 cookie dough balls (22 scoops in total).
Use a fork to gently press down on each cookie, dipping the fork in extra oat flour to prevent sticking.
Bake the cookies for 8 minutes in the preheated oven.
Allow the cookies to cool before moving on to the next step.
Once cooled, fill each cookie with extra nut butter.
