Flourless Pumpkin Blender Pumpkin Cakes
Ingredients
- 1 cup pumpkin purée
- 1/4 cup nut butter (such as pumpkin spice pecan butter)
- 2 eggs
- 1/3 cup coconut sugar
- 1 tbsp. cinnamon
- 1/2 tsp. baking powder
- 1/4 cup vanilla protein powder (or all-purpose flour)
- White chocolate (for topping)
- Sprinkles (for topping)
Preparation
Preheat the oven to 350°F (175°C) and grease the pumpkin pan.
Place all the ingredients into a food processor or high-powered blender, and blend until well combined.
Spoon the batter into the pumpkin pan, filling each cavity (makes 5 pumpkins). Alternatively, you can use a muffin tin.
Bake the pumpkin cakes for 20 minutes, then let them cool before adding white chocolate and sprinkles on top.
