Flourless Pumpkin Blender Pumpkin Cakes

Ingredients

  • 1 cup pumpkin purée
  • 1/4 cup nut butter (such as pumpkin spice pecan butter)
  • 2 eggs
  • 1/3 cup coconut sugar
  • 1 tbsp. cinnamon
  • 1/2 tsp. baking powder
  • 1/4 cup vanilla protein powder (or all-purpose flour)
  • White chocolate (for topping)
  • Sprinkles (for topping)

Preparation

  1. Preheat the oven to 350°F (175°C) and grease the pumpkin pan.

  2. Place all the ingredients into a food processor or high-powered blender, and blend until well combined.

  3. Spoon the batter into the pumpkin pan, filling each cavity (makes 5 pumpkins). Alternatively, you can use a muffin tin.

  4. Bake the pumpkin cakes for 20 minutes, then let them cool before adding white chocolate and sprinkles on top.
