Our Chocolate Chunk Pumpkin Protein Muffins
Ingredients
- 1 of cup pureed pumpkin
- 1/3 cup of coconut oil
- 1 cup of coconut sugar
- 3/8 cup rice milk
- 1 tsp vanilla extract
- 1 1/4 cup all purpose flour
- 1/4 cup of pumpkin seed protein powder (we used @purya.superfoods)
- 1 tsp of ground cinnamon
- 1 tsp of nutmeg
- 1/2 of ground ginger
- 1/2 tsp of baking powder
- 1/2 tsp of baking soda
- 1/2 cup of chocolate chunks
Preparation
Combine first five ingredients into a large bowl
Next combine remaining ingredients in a separate large bowl
Gradually combine dry ingredients into wet ingredients
Stir until all ingredients are well combined
Preheat oven to 350f
In cupcake forms of choice fill 3/4 full and top with raw pumpkin seeds
Bake for 22-24 minutes
Once time is up remove from oven and allow to cool for 5 minutes
Drizzle muffins with chocolate and garnish off with extra pumpkin seeds
