Our Chocolate Chunk Pumpkin Protein Muffins

Ingredients

  • 1 of cup pureed pumpkin
  • 1/3 cup of coconut oil
  • 1 cup of coconut sugar
  • 3/8 cup rice milk
  • 1 tsp vanilla extract
  • 1 1/4 cup all purpose flour
  • 1/4 cup of pumpkin seed protein powder (we used @purya.superfoods)
  • 1 tsp of ground cinnamon
  • 1 tsp of nutmeg
  • 1/2 of ground ginger
  • 1/2 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 cup of chocolate chunks

Preparation

  1. Combine first five ingredients into a large bowl

  2. Next combine remaining ingredients in a separate large bowl

  3. Gradually combine dry ingredients into wet ingredients

  4. Stir until all ingredients are well combined

  5. Preheat oven to 350f

  6. In cupcake forms of choice fill 3/4 full and top with raw pumpkin seeds

  7. Bake for 22-24 minutes

  8. Once time is up remove from oven and allow to cool for 5 minutes

  9. Drizzle muffins with chocolate and garnish off with extra pumpkin seeds
