Pizza Stuffed Spaghetti Squash
Ingredients
- 1 spaghetti squash
- Olive oil
- Tomato marinara sauce
- Pepperoni
- Mushrooms
- Spinach
- Onions
- Feta cheese
Preparation
Preheat oven to 400°F.
Cut squash in half; if it’s too tough to cut, microwave for 3-4 minutes to soften it.
Remove the seeds from the middle.
Spray a pan with olive oil spray or oil it with a paper towel.
Place the squash face down and bake for 40-50 minutes.
Let cool for a few minutes, then use a fork to pull the 'noodles' out.
Sauté mushrooms, spinach, and onions until softened
Stuff the squash with tomato marinara sauce, pepperoni, sautéed vegetables, and feta cheese.
Broil for a few minutes, keeping an eye on it so it doesn’t burn.
