Pizza Stuffed Spaghetti Squash

Ingredients

  • 1 spaghetti squash
  • Olive oil
  • Tomato marinara sauce
  • Pepperoni
  • Mushrooms
  • Spinach
  • Onions
  • Feta cheese

Preparation

  1. Preheat oven to 400°F.

  2. Cut squash in half; if it’s too tough to cut, microwave for 3-4 minutes to soften it.

  3. Remove the seeds from the middle.

  4. Spray a pan with olive oil spray or oil it with a paper towel.

  5. Place the squash face down and bake for 40-50 minutes.

  6. Let cool for a few minutes, then use a fork to pull the 'noodles' out.

  7. Sauté mushrooms, spinach, and onions until softened

  8. Stuff the squash with tomato marinara sauce, pepperoni, sautéed vegetables, and feta cheese.

  9. Broil for a few minutes, keeping an eye on it so it doesn’t burn.
