Citrus Garlicky Kale

Ingredients

  • 2-3 minced cloves garlic
  • 1 small orange / clementine / tangerine or 1-2 ‘cuties’ sliced in half
  • half of a lime
  • 1/4 cup minced chives or other herbs (optional)
  • salt and chili powder

Preparation

  1. Heat a large pan to medium heat and add approx 1 tbsp avocado or olive oil

  2. When oil moves quickly around the pan, add garlic

  3. Sauté 30-45 seconds, stirring constantly, then add kale

  4. Stir to incorporate garlic throughout and cover with a lid

  5. Turn heat down a bit and steam approx 3 mins until kale is softened but not totally wilted

  6. Remove lid and squeeze in juice from both citruses, then stir in chives, then add salt and chili powder to taste (I used a scant 1/4 tsp each)

  7. Cook just another minute or 2, stirring, to let the flavors come together, then serve and enjoy
