Stuffed Round Courgettes with Lentils and Feta
Ingredients
- 1 pack ready cooked puy lentils
- 2-3 cloves garlic
- 1 shallot
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric
- 1 red chilli, deseeded
- 1 tablespoon olive oil
- Salt to taste
- 4 round courgettes
- Feta cheese
- Chilli oil
Preparation
Fry the shallots in the oil, when soft, add garlic, cumin, chilli and stir for a minute.
Next add the lentils, turmeric and salt to taste.
Finally fill the scooped courgettes with the lentil mix and bake in the oven for 20 minutes at 170°C.
Crumble on feta, sprinkle chilli flakes and drizzle chilli oil to serve. Enjoy
