Stuffed Round Courgettes with Lentils and Feta

Ingredients

  • 1 pack ready cooked puy lentils
  • 2-3 cloves garlic
  • 1 shallot
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric
  • 1 red chilli, deseeded
  • 1 tablespoon olive oil
  • Salt to taste
  • 4 round courgettes
  • Feta cheese
  • Chilli oil

Preparation

  1. Fry the shallots in the oil, when soft, add garlic, cumin, chilli and stir for a minute.

  2. Next add the lentils, turmeric and salt to taste.

  3. Finally fill the scooped courgettes with the lentil mix and bake in the oven for 20 minutes at 170°C.

  4. Crumble on feta, sprinkle chilli flakes and drizzle chilli oil to serve. Enjoy
