Baked Portobello Mushrooms with Tomato and Basil

Ingredients

  • portobello mushrooms
  • large organic tomato
  • mozzarella cheese (optional)
  • sea salt and black pepper
  • EBTB seasoning
  • fresh basil
  • Trader Joe's balsamic glaze
  • avocado oil or olive oil

Preparation

  1. Preheat oven to 400F.

  2. Lightly scrape out the portobello mushroom, drizzle with a bit of avocado oil or olive oil, and sprinkle with sea salt and pepper.

  3. Place a thick slice of tomato inside the portobello and drizzle again with avocado oil, sea salt, and pepper.

  4. Place in the oven and bake for 10-15 minutes, depending on desired doneness.

  5. Once removed from the oven, add EBTB seasoning, fresh basil, and balsamic glaze, or optionally place a thick slice of mozzarella on top and broil until melted.
