Baked Portobello Mushrooms with Tomato and Basil
Ingredients
- portobello mushrooms
- large organic tomato
- mozzarella cheese (optional)
- sea salt and black pepper
- EBTB seasoning
- fresh basil
- Trader Joe's balsamic glaze
- avocado oil or olive oil
Preparation
Preheat oven to 400F.
Lightly scrape out the portobello mushroom, drizzle with a bit of avocado oil or olive oil, and sprinkle with sea salt and pepper.
Place a thick slice of tomato inside the portobello and drizzle again with avocado oil, sea salt, and pepper.
Place in the oven and bake for 10-15 minutes, depending on desired doneness.
Once removed from the oven, add EBTB seasoning, fresh basil, and balsamic glaze, or optionally place a thick slice of mozzarella on top and broil until melted.
