Homemade Gluten-Free Paleo Vegan Thin Mints
Ingredients
- 1/4 cup coconut flour
- 3/4 cup almond flour
- 1/2 cup cacao powder
- 1/2 cup coconut sugar
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 5 tbsp melted coconut oil
- 1 tsp vanilla extract
- 1/4 cup unsweetened applesauce
- 1 tsp peppermint extract

Preparation
Mix 1/4 cup coconut flour, 3/4 cup almond flour, 1/2 cup cacao powder, 1/2 cup coconut sugar, 3/4 tsp baking soda, 1/2 tsp baking powder, and 1/4 tsp salt, then set aside.
Mix 5 tbsp melted coconut oil, 1 tsp vanilla extract, 1/4 cup unsweetened applesauce, and 1 tsp peppermint extract.
In a blender or food processor, combine the dry ingredients with the wet ingredients until the mixture becomes dough-like.
Roll out and flatten the dough between two pieces of parchment paper to about 1/4 inch thick, then chill in the fridge for at least 30 minutes.
Use a 1.5-inch cookie cutter or improvise with the top of a small glass to cut out cookie shapes.
Bake at 375 degrees Fahrenheit for 10-14 minutes, flipping halfway through.
Let the cookies cool, then dip them in a mixture of melted enjoy life foods chocolate and 2 tsp peppermint extract using a fork to hold them, and place in the freezer for about an hour.
They take a little longer to make than most recipes but are worth it for the gluten-free, paleo, and vegan version that tastes like the original Thin Mints.
