Pineapple Fried Rice
Ingredients
- whole fresh pineapple
- one large bunch of green onions
- 2 carrots
- 2 bunches of fresh asparagus
- sesame oil
- coconut aminos
- organic edamame
- 5 cups of leftover cooked brown rice
- raw sesame seeds
Preparation
I chopped up a whole fresh pineapple, one large bunch of green onions, 2 carrots, and 2 bunches of fresh asparagus
Then I sautéed them lightly with a bit of toasted sesame oil, and coconut aminos, adding a bag of steamed organic edamame and about 5 cups of leftover cooked brown rice at the end.
Sprinkle with raw sesame seeds, and everyone is happy.
