Pineapple Fried Rice

Ingredients

  • whole fresh pineapple
  • one large bunch of green onions
  • 2 carrots
  • 2 bunches of fresh asparagus
  • sesame oil
  • coconut aminos
  • organic edamame
  • 5 cups of leftover cooked brown rice
  • raw sesame seeds

Preparation

  1. I chopped up a whole fresh pineapple, one large bunch of green onions, 2 carrots, and 2 bunches of fresh asparagus

  2. Then I sautéed them lightly with a bit of toasted sesame oil, and coconut aminos, adding a bag of steamed organic edamame and about 5 cups of leftover cooked brown rice at the end.

  3. Sprinkle with raw sesame seeds, and everyone is happy.
