Three Cheese and Spinach Cobb Loaf

Ingredients

  • 2 tbsp butter
  • 2 minced garlic cloves
  • 120 grams fresh baby spinach
  • Juice of 1 lemon
  • 1 tbsp onion powder (optional)
  • 300g cream cheese
  • 200 grams Tatua sour cream
  • 1/2 cup grated cheddar cheese
  • 1/2 cup grated parmesan cheese
  • Round cobb loaf or sourdough loaf
  • Vegetables to serve

Preparation

  1. Preheat oven to 200°C. Over medium heat, melt butter in a pan, add garlic, and cook for 1-2 minutes. Add spinach and cook until wilted. Squeeze lemon juice over it and set aside.

  2. In a bowl, mix together onion powder, cream cheese, sour cream, grated cheeses. Add the spinach mixture, mix well to combine, and season to taste.

  3. Cut a small layer off the top of the bread loaf, hollow out the loaf, keeping the bread to the side. Transfer the dip to the crust and place on a baking tray. Spread the bread chunks around the loaf, drizzle with oil, and place into the oven. Cook for 10-15 minutes or until bread is golden. Serve the dip with the bread pieces and crudite vegetables.
