Simple Banana Bread with Rice Flour and Spices

Ingredients

  • 1.5 cups rice flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg powder
  • pinch of salt
  • 2 ripe bananas
  • 0.5 cups vegetable milk
  • 1 espresso shot
  • 2 tablespoons coconut oil

Preparation

  1. Blend all ingredients together.

  2. Pour the mixture into a small mold.

  3. Bake at 190°C for 30 minutes.

  4. Optionally, decorate with sliced strawberries for a final touch.
