Creamy Pumpkin Baked Macaroni

Ingredients

  • About 4 cups cooked whole grain macaroni
  • 1 cup oven roasted pumpkin
  • 1 cup fresh almond milk
  • 1/2 cup soaked cashews
  • 1 tablespoon nutritional yeast
  • 1 clove garlic
  • 2 teaspoons whole grain mustard
  • Salt
  • Pepper
  • 1 cup chopped kale
  • 1/2 teaspoon ancho chili flakes
  • 1/2 teaspoon chipotle chili flakes
  • 1 tablespoon olive oil
  • 2 tablespoons soaked buckwheat groats

Preparation

  1. Blend together the pumpkin, almond milk, soaked cashews, nutritional yeast, garlic, whole grain mustard, salt, and pepper.

  2. Preheat the oven to 180°C.

  3. Drizzle olive oil on a baking dish, add the macaroni and blended sauce, and mix well.

  4. Add the kale, chipotle and ancho chili flakes, and mix together.

  5. Sprinkle the buckwheat over the top and bake for 15 minutes.
