Creamy Pumpkin Baked Macaroni

Ingredients

  • 4 cups of cooked whole grain macaroni @getloosefoods
  • 1 cup of oven roasted pumpkin
  • 1 cup of fresh almond milk
  • 1/2 cup of soaked cashews
  • 1 tbs of nutritional yeast
  • 1 clove of garlic
  • 2 tsp of whole grain mustard
  • salt
  • pepper
  • 1/2 tsp of ancho chilli flakes @sainsburys
  • 1/2 tsp of chipotle chilli flakes @sainsburys
  • 1 tbs of olive oil
  • 2 tbs of soaked buckwheat groats (for 4 hours or overnight)

Preparation

  1. Blend together everything on the list above from the pumpkin to the salt and pepper

  2. Preheat the oven to 180 C

  3. Drizzle the olive oil on a baking dish, add the macaroni and blended sauce. Mix well together

  4. Add the kale, chipotle and ancho and mix together

  5. Sprinkle the buckwheat over the top and bake for 15 minutes
