Pb Pumpkin Blondies

Ingredients

  • 2 flax OR regular eggs
  • 1 cup pumpkin purée
  • 1 tbsp apple sauce (or 1 mashed banana)
  • 3/4 cup almond flour
  • 1/4 cup peanut butter or any nut butter
  • 2 tbsp sweetener of choice (maple syrup, raw honey, coconut sugar, date syrup, or 1 tbsp monk fruit)
  • 1 tsp Vanilla
  • 1 tsp baking soda
  • 3 tbsp extra dark chocolate chips / chunks, divided
  • (I used 100% cacao chips & 100% midnight chocolate from @evolvedchocolate for the topping)
  • sea salt to sprinkle
  • Optional: protein or collagen powder of choice

Preparation

  1. Preheat oven to 350

  2. Mix all but baking soda, chocolate chips and sea salt

  3. Fold in 2 tbsp chocolate and baking soda

  4. Pour into a lightly oiled baking pan

  5. Sprinkle with remaining chocolate and sea salt

  6. Bake for 25 minutes

  7. Look cool to thicken! ENJOY THIS FUNCTIONALLY CLEAN TREAT
