Pb Pumpkin Blondies
Ingredients
- 2 flax OR regular eggs
- 1 cup pumpkin purée
- 1 tbsp apple sauce (or 1 mashed banana)
- 3/4 cup almond flour
- 1/4 cup peanut butter or any nut butter
- 2 tbsp sweetener of choice (maple syrup, raw honey, coconut sugar, date syrup, or 1 tbsp monk fruit)
- 1 tsp Vanilla
- 1 tsp baking soda
- 3 tbsp extra dark chocolate chips / chunks, divided
- (I used 100% cacao chips & 100% midnight chocolate from @evolvedchocolate for the topping)
- sea salt to sprinkle
- Optional: protein or collagen powder of choice
Preparation
Preheat oven to 350
Mix all but baking soda, chocolate chips and sea salt
Fold in 2 tbsp chocolate and baking soda
Pour into a lightly oiled baking pan
Sprinkle with remaining chocolate and sea salt
Bake for 25 minutes
