Pistachio Zucchini Bread W\ a Lemon Icing

Ingredients

  • 2 eggs
  • - 1 cup spelt flour - 1 cup oats - 1 small zucchini/ courgette, grated - 1/4 cup sugar - 1/4 cup maple syrup - 1 tsp baking powder - 1 tsp vanilla essence - 1/3 cup of pistachios plus extra for decoration ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 pot of Betty Crocker lemon icing

Preparation

  1. Preheat the oven to 180 degrees celsius and line a 1lb loaf tin with coconut oil

  2. In a bowl, mix the flour, oats, sugar and zucchini together

  3. Add the eggs, maple syrup, baking powder and vanilla

  4. Once well combined, stir in the pistachios and pour the mix into the prepared tin and bake in the oven for 35-40 mins until golden on top and knife comes out clean

  5. Allow to cook completely before covering with lemon icing and topping with extra pistachios
