Pumpkin Blondies with Peanut Butter
Ingredients
- 2 flax eggs or 2 regular eggs
- 1 cup pumpkin purée
- 1 tablespoon applesauce or 1 mashed banana
- 3/4 cup almond flour
- 1/4 cup peanut butter or any nut butter
- 2 tablespoons sweetener of choice (maple syrup, raw honey, coconut sugar, date syrup, or 1 tablespoon monk fruit)
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 3 tablespoons extra dark chocolate chips or chunks, divided
- Sea salt, for sprinkling
- Optional: protein powder or collagen powder of choice
Preparation
Preheat oven to 350 degrees Fahrenheit.
Mix all ingredients except baking soda, chocolate chips, and sea salt.
Fold in 2 tablespoons of chocolate chips and baking soda.
Pour the mixture into a lightly oiled baking pan.
Sprinkle the remaining chocolate chips and sea salt on top.
Bake for 25 minutes.
Let cool to thicken.
