Pumpkin Blondies with Peanut Butter

Ingredients

  • 2 flax eggs or 2 regular eggs
  • 1 cup pumpkin purée
  • 1 tablespoon applesauce or 1 mashed banana
  • 3/4 cup almond flour
  • 1/4 cup peanut butter or any nut butter
  • 2 tablespoons sweetener of choice (maple syrup, raw honey, coconut sugar, date syrup, or 1 tablespoon monk fruit)
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 3 tablespoons extra dark chocolate chips or chunks, divided
  • Sea salt, for sprinkling
  • Optional: protein powder or collagen powder of choice

Preparation

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Mix all ingredients except baking soda, chocolate chips, and sea salt.

  3. Fold in 2 tablespoons of chocolate chips and baking soda.

  4. Pour the mixture into a lightly oiled baking pan.

  5. Sprinkle the remaining chocolate chips and sea salt on top.

  6. Bake for 25 minutes.

  7. Let cool to thicken.
