Avocado Salad with Tomato and Chilli Dressing
Ingredients
- 2 tablespoons extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 large clove garlic
- 1/2 teaspoon red chilli flakes (optional)
- Salt and pepper to taste
- 2 ripe avocados
- 1 red onion
- 200g baby plum tomatoes
Preparation
Finely mince the garlic.
Combine the minced garlic with 2 tablespoons extra virgin olive oil, 2 tablespoons red wine vinegar, 1/2 teaspoon red chilli flakes (optional), salt, and pepper to make the dressing.
Roughly chop 2 ripe avocados, 1 red onion, and 200g baby plum tomatoes.
Pour the dressing over the chopped mixture and serve.
