Avocado Salad with Tomato and Chilli Dressing

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 large clove garlic
  • 1/2 teaspoon red chilli flakes (optional)
  • Salt and pepper to taste
  • 2 ripe avocados
  • 1 red onion
  • 200g baby plum tomatoes

Preparation

  1. Finely mince the garlic.

  2. Combine the minced garlic with 2 tablespoons extra virgin olive oil, 2 tablespoons red wine vinegar, 1/2 teaspoon red chilli flakes (optional), salt, and pepper to make the dressing.

  3. Roughly chop 2 ripe avocados, 1 red onion, and 200g baby plum tomatoes.

  4. Pour the dressing over the chopped mixture and serve.
