Roasted Balsamic Strawberry Crostini

Ingredients

  • 1 lb. strawberries, quartered
  • 2 tbsp balsamic glaze (reduction) + more for topping
  • 2 tbsp granulated sugar
  • 2 tbsp chopped mint
  • 1 baguette, toasted
  • Vegan ricotta
  • Fresh basil and mint
  • Pistachios

Preparation

  1. Preheat the oven to 375°F.

  2. Slice the strawberries and toss them in balsamic glaze, sugar, and chopped mint.

  3. Transfer the strawberries to a baking sheet and roast for 25-30 minutes, until they are tender and fragrant.

  4. Slice the baguette and brush each slice with olive oil. Toast the slices in the oven for 15 minutes at the same temperature.

  5. Let the toasted bread cool slightly, then spread vegan ricotta on top of each slice.

  6. Top the ricotta with the roasted strawberries, crushed pistachios, and additional fresh basil and mint.

  7. Drizzle with more balsamic glaze.

  8. Enjoy!
