Berries and Cream Crepes


  • for filling:
  • 1 1/4 cup of frozen blueberries
  • 1 cup of frozen raspberries
  • 4 tsp of coconut oil
  • 1/2 tsp of turbinado sugar
  • for crepes:
  • 1 banana
  • 1 cup of all-purpose flour
  • 1 1/4 cup of coconut milk
  • 1/4 cup of maple syrup
  • 1 tbs of melted vegan spread
  • for whipped cream:
  • the creamy part of canned coconut milk


  1. For filling:

  2. In a small pot, on medium heat, combine all ingredients and let simmer for about 10 minutes, stirring often

  3. Place in freezer, stirring often while crepes are cooking

  4. For crepes:

  5. Mush banana in a medium bowl

  6. Add all other ingredients and mix until well combined

  7. Cook on medium heat with a little bit of vegan spread until bubbles show

  8. Flip and cook until other side is is golden

  9. For whipped cream:

  10. In a cold medium metal bowl place creamy part of canned coconut milk and whip with egg beater until fluffy

  11. Remove filling from freezer and lay out crepes

  12. Place filling on top and either roll or fold your crepes

  13. Add a little filling on top and a spoonful of whipped cream

  14. Garnish with berries and powdered sugar and enjoy ✌???️ #threebunnies
