Laura’s Easy Banana Pancake Recipe
Ingredients
- 200g mashed banana
- 100g self raising flour (gf if required)
- a squeeze of lemon juice
- 1 tsp baking powder (gf if required)
- 100ml milk (i use soya)
- a splash of water (depending how thick you want them)
Preparation
Chop banana and microwave for 1 minute until mushy (old/spotty bananas are best and even better from frozen as it creates a natural sweet juice)
Put everything into a bowl and mix until smooth
Spray some cooking/ coconut oil into a pan and fry pancakes on each side for a minute or so
Drizzle with maple syrup
