Laura’s Easy Banana Pancake Recipe

Ingredients

  • 200g mashed banana
  • 100g self raising flour (gf if required)
  • a squeeze of lemon juice
  • 1 tsp baking powder (gf if required)
  • 100ml milk (i use soya)
  • a splash of water (depending how thick you want them)

Preparation

  1. Chop banana and microwave for 1 minute until mushy (old/spotty bananas are best and even better from frozen as it creates a natural sweet juice)

  2. Put everything into a bowl and mix until smooth

  3. Spray some cooking/ coconut oil into a pan and fry pancakes on each side for a minute or so

  4. Drizzle with maple syrup
